On the days when you need a quick and easy but healthy meal, this recipe comes in handy. I really enjoy this dish because it has very simple ingredients, a variety of texture, and a zesty kick to it. You could add torn basil, which would compliment the lemon nicely. This dish is great for a meal or even an appetizer to share with friends and family.
1 1/3 cup pearl/Israeli couscous (found at Trader Joe’s or Sprouts)
1 3/4 cup low sodium chicken broth
2 tbsp. olive oil, plus more for pan
1 Alaskan salmon burger (the Costco version is tasty)
2 cup kale, chopped
1 cup spinach, chopped
1/2 lemon, juiced
1/2 red onion, chopped
salt and freshly ground pepper
Add 1 tbsp of olive oil and couscous to a large saucepan over medium heat and sauté couscous until lightly brown.
Pour the chicken broth over couscous and cook until there is no more broth left over. Set aside in a bowl.
Keep pan over medium heat and add 1 tbsp of olive oil and add the kale and red onions. Saute until the onions are caramelized, then add spinach and saute for a minute.
Add the salmon patty and cook both sides until soft. Then chop the salmon with the spatula and mix the veggies altogether with the couscous. Sprinkle salt and pepper to taste, and add lemon juice to taste.
Serve warm and enjoy.
