I enjoy baking this recipe whenever I have friends or family over. We’d do it potluck style and have everyone bring sides that will go well with this dish. It gets festive and fun, and everyone always leaves with a full belly and a happy face.
2 pkg carnitas pork
2 bottles enchilada sauce
8-10 corn tortillas
1/2 cup onions, diced
1 medium jalapeno, diced
1/2 cup cilantro, diced
1 bag of Mexican cheese
1 tsp olive oil
2 tbsp sour cream
2 tbsp guacamole (optional)
-Heat carnitas as instructed in the microwave. Saute onions and jalapeños on a medium saucepan on medium heat.
-Use two forks to shred the carnitas in a large bowl. Add into the saucepan and mix everything together.
-On a large baking pan, add half of the enchilada sauce and the other half into the saucepan with all the ingredients. Mix everything together, turn off heat.
-Preheat oven to 350°.
-On a small saucepan on medium to low heat, heat tortillas both sides until soft.
-Put the tortilla on a plate and add the mixed ingredients and top it with cheese. Roll in half, facing the folds down and add it into the baking pan. Repeat until you fill up the baking pan.
-Top it off with the second bottle of the enchilada sauce and sprinkle the bag of Mexican cheese.
-Bake for 30 minutes, serve immediately. You can add the condiments, sour cream, guacamole, and cilantro.
